Quick and Easy Pasta Sauce

Pasta sauce is really simple. Why people don’t make it themselves more and continue to the use those jars of sauce baffle me. I realise I might sound like a bit of a food snob there but those jars are packed full of sugar! I make mine myself all the time. This one is so tasty and only takes about 15 minutes.

Ingredients

  • 4 pieces of bacon
  • 3 cups of pasta
  • 2 cloves of garlic, minced
  • 1 red onion, diced
  • Pack of baby tomatoes
  • 1 green pepper, diced
  • 1 sweet pepper, diced
  • 1 large courgette, diced
  • tablespoon of dry basil
  • tablespoon of dry oregano
  • 1 tablespoon of tomato paste
  • 2 tablespoons of water
  • salt & pepper to taste

Method

  1. Cook the bacon in the oven on high for about 15 minutes, or until crispy then dice.
  2. While the bacon is cooking prepare the rest of the vegetables. Add the garlic and onion to a large pan, containing a splash of hot oil, and cook until the onion is translucent. Then add the rest of the vegetables and cook for a further 3-5 minutes. Mix well so nothing burns.
  3. Add the herbs, tomato paste and water and cook for 5 minutes while continuing to stir. You may need to add a little more water to the pan.
  4. Cook the pasta to instructions.
  5. When the bacon is cooked dice and add to the vegetable sauce and serve.
