Pasta sauce is really simple. Why people don’t make it themselves more and continue to the use those jars of sauce baffle me. I realise I might sound like a bit of a food snob there but those jars are packed full of sugar! I make mine myself all the time. This one is so tasty and only takes about 15 minutes.
Ingredients
- 4 pieces of bacon
- 3 cups of pasta
- 2 cloves of garlic, minced
- 1 red onion, diced
- Pack of baby tomatoes
- 1 green pepper, diced
- 1 sweet pepper, diced
- 1 large courgette, diced
- tablespoon of dry basil
- tablespoon of dry oregano
- 1 tablespoon of tomato paste
- 2 tablespoons of water
- salt & pepper to taste
Method
- Cook the bacon in the oven on high for about 15 minutes, or until crispy then dice.
- While the bacon is cooking prepare the rest of the vegetables. Add the garlic and onion to a large pan, containing a splash of hot oil, and cook until the onion is translucent. Then add the rest of the vegetables and cook for a further 3-5 minutes. Mix well so nothing burns.
- Add the herbs, tomato paste and water and cook for 5 minutes while continuing to stir. You may need to add a little more water to the pan.
- Cook the pasta to instructions.
- When the bacon is cooked dice and add to the vegetable sauce and serve.
Everything is better with bacon! Love it 🙂
