Spicy Couscous

Couscous is so simple to make but can be hard to make nice, or interesting. It can be difficult to serve up something over than tiny drops of wheat. Fortunately there’s this…

  • 1 cup of couscous
  • 1 cup of boiling water
  • 1 tablespoon of turmeric
  • 1 tablespoon of chilli powder
  • Handful of raisins

  1. Put couscous into a large bowl and mix in spices. Give the dry mixture a good stir, make sure that chilli and turmeric gets everywhere.
  2. Pour in boiling water. Cover for about 10 minutes, or until the couscous has absorbed all of the liquid. Stir the mixture again to make sure it breaks up and isn’t one giant lump.

That’s it! Serve hot or cold. This makes a great addition to a salad or as a side dish. I’ve used this in everything from wraps and salads to just eating on its own as a snack!
