Teriyaki Beef and Soba Noodles

Succulent beef, tasty noodles and crunchy vegetables make for a tasty dinner. A bottle of teriyaki never goes to waste!


  • 270g packet soba noodles
  •  2 teaspoons olive oil
  •  500g diced beef
  •  2 spring onions, thinly sliced, plus extra to serve
  •  1 garlic clove, crushed
  •  2cm piece fresh ginger, finely grated
  • 4 tablespoons teriyaki sauce
  •  1 carrot, cut into matchsticks
  •  1 red pepper, cut into matchsticks
  •  1 cucumber, cut into matchsticks
  •  1/2 iceberg lettuce, roughly shredded
  • 1 teaspoon sesame seeds


  1. Cook noodles as per packet instructions.
  2. Meanwhile, heat a wok or large frying pan over medium-high heat. Add oil. When heated add beef. Stir-fry for 5 to 6 minutes or until browned. Add onion, garlic and ginger. Stir-fry for 2 minutes. Add teriyaki sauce. Stir-fry for 2 to 3 minutes or until heated through. Remove from heat.
  3. That’s it! Serve in  a bowl with the vegetables, noodles and lettuce.
